  • For the syrup, we need 75 milliliters of water and 25 grams of sugar.
  • 15 grams of cornstarch (cornflour).
  • 250 milliliters of water.
  • 125 milliliters of extra virgin olive oil.

Once we have all the ingredients ready, it's time to hit the stove!


Start by heating the ingredients for the syrup in a saucepan. Bring it to a boil and let it thicken slightly until it reaches a fine thread consistency. If you take some with your fingers dipped in water, you'll see that it forms soft threads that break easily.


Meanwhile, we can prepare the rest of the olive oil jam recipe. To do this, we need to dissolve the cornstarch in water. It’s best to do this in cold water, as cornstarch blends more easily than in hot water. Once we have a smooth, lump-free paste, let it cook over low heat. Once it reaches a thick custard consistency, remove it from the heat.


Allow the syrup and the cornstarch mixture (now cooked) to cool down a bit.


When they are warm to the touch, combine the two parts: the syrup and the cornstarch mixture. Gradually, while stirring constantly, incorporate the extra virgin olive oil.


If there are any lumps and you want to smooth them out, you can blend the jam.
